When I had my fox body Mustangs, the clutch pedal was slightly higher by approximately an inch or more. This enabled me to put my seat further back. As they are, I tend mash the brakes on too hard when I'm not too careful. I am 5'6".

Any folks have the same experience or same sentiments? Any aftermarket people out there that might think its worth it to develop an assembly (shaft?) that would put the clutch pedal higher?

I haven't used them, myself, but the cheapest and simplest way that people raise the pedals is with a block. Do a google image search for "clutch pedal extender block" and that should steer you in the right direction. :)
Edit: the pedal extension for the Mustang does not fit the Fiesta. :D|
Sorry to hear that. I didn't know of any Fiesta-specific pedal blocks, but conceptually, it would be the simplest way to achieve what you want. If you find something that works, please update us, as it might help someone else here, too. :)
