I got a set of these pedal covers. Decorative but they also give a bit of extra height (about 3/4 inch) so that short people like me can have our seats back a bit.

I got them off of eBay. They are aluminum plates that are attached to the rubber thing with the nubs which slip over the existing pedals. They are extremely difficult to put on so I had my dealer do it.

The ST pedals are tiny and slippery, so making a change is not a bad idea.

The Ford Accessories pedal pads for the non-ST Fiesta are a huge pain in the ass to install as well, since they slip around the steel pedal pad. They are a very tight fit to prevent slipping or moving around, but wow, they were not fun to install. I bet the ST pads are exactly the same.

I am digging the OMP pads, they looks pretty good. Did you screw them directly into the factory covers?
