I have been trying to find a new winter tire/rim set for my '15 Fiesta ST. I am trying to avoid paying $900 to have a brand new set from Tire Rack shipped to Holland. I did find a used winter tire set, and from what I have been able to research, it should work with my ST, though it originally came from a Ford Escort. If anyone who knows more about this could give me some advice, it'd be much appreciated. Also, I should add that I found the TPMS senors that would need to be installed.

Since most of us are in the US, it will be hard to get a good answer. The US Escort stopped using 4x108 bolt circle around 1990 when the car became Mazda based and used 4x100 wheels until it was discontinued. I have seen a number of Fiesta ST's in Europe running Escort Cosworth wheels, so I know there is a good chance the set you are looking at will work. When it comes to 4x108 wheels, MkI Focus and MkI Mondeo should work as well.
